Another Week?


Another week has passed without a post. While I actually did cook this week, I didn't do it much and didn't get any pics. See, CJ and I were on vacation this week, so we ate out a lot. A LOT.

But, I did make a couple things. The only new recipe I tried was this:

It is Spicy Cocoa Sloppy Joes. They were not spicy. They really weren't very good. I added extra chili powder and salt, but it didn't help. I would have thrown some Sriracha sauce in and some garlic if I ever cooked this again, but I probably won't.

Oh, and our hamburger buns were moldy, so ours were much less attractive on hotdog buns.

I did make some awesome roasted balsamic veggies (eggplant, green and red peppers, garlic, zucchini, yellow squash, and red onion) with basil. They were super tasty, but I unfortunately didn't get a pic of that. They were tasty though.

Whew, What A Week

So, no posts for an entire week. What's going on?

The truth is, I didn't cook a single thing all week. As outrageous as it seems, I just didn't. Monday I went to bed before dinner. Tuesday I went out with people from work. Wednesday is bar trivia night for CJ, so I met him there for dinner. Thursday I picked up tortas from Manny's Tortas. Friday, we got Chinese food from Village Wok. It was a very busy week.

Yesterday, I roasted a whole chicken. It sort of looked like this:
We ate it before I got a picture of it. It was super tasty. I rubbed the whole thing down with a combo of olive oil, lemon, garlic, honey, thyme, sage, salt and pepper. I stuffed some garlic and lemons in the cavity and threw some in the dutch oven with the chicken. I started the oven at 400 degrees and immediately dropped it down to 250. It was taking forever to cook, so after about 2 hours, I raised the temp to 325.

Next time I will get a picture.

Every Day Food

We don't eat bison and ribs every night. We can't. We both work full time, and I often don't get home until late. On those nights we have leftovers, or takeout, or taco salad.

We eat Taco Salad at least once a week. Lots of lettuce, some beef/beans/chicken, some salsa, and whatever else we have around the house. It is the easiest, tastiest thing we throw together in the middle of the week.
Tonight we had hamburgers on the grill. Boring again.

Bison Tenderloin

I picked up some Bison Tenderloin Steaks at my favorite meat purveyor, Farm in the Market, last Friday. They are from Big Woods Bison in Nerstrand, Minnesota. Local, low fat, and uber tasty.


Served on a tossed salad with roasted potatoes, it was a perfectly balanced meal (well, if you add a glass of milk or something.) The meat was much more tender than I ever could have imagined. While we eat a lot of ground bison around here, we had never had bison steaks. We will definitely be getting them again.

So tasty

Oh, lord. Jesus has risen and I made the tastiest ribs for dinner. Ribs and bean salad. The salad is my recipe, the ribs are Alton's. They were so tender, tasty, and a bit spicy.

Chicken Friday

Friday night we had chicken and rice, a very simple meal. I used this chicken recipe:
orange braised chicken with olives
and this rice recipe:
yellow rice with sofrito.

I'm learning lots of things with this new blog:
1) Brown plates + brown foods = ugly looking food. I'm going to start trying to use white plates for pics, I think that will help.
2) Meat goes on top. See that pick above. It would look better if the meat would have been on top.
3) Green. Plates need green. Or some bright color.

Snapper Nuggets

Tonight, CJ helped out and we made Red Snapper Nuggets with polenta and asparagus (and a beer).

The snapper was dipped in veggie egg beaters then a mixture of cornmeal, paprika, salt and pepper and pan fried. The asparagus was steamed. The polenta was one of those weird tubes, with water, garlic, fresh rosemary and a pat of butter added.
Obviously, I've chosen to take a new approach with my blog. There are lots of reasons why, but one of them is that I love to cook. I'm hoping I will do a better job of keeping this up because it is about something I love.

I'd like to point out, I like to cook, not bake. I don't really know how to bake. I try and make boxed brownies sometimes, but I never know when they are done. I do know some great bakeries.

Well, that said, I know lots of great food places, both restaurants and food suppliers. This may also be a journey through them also, definitely through the CSA we just signed up for: Double Rabbit Farm.
