Sandwiches Tonight
Tonight we had Tuna Melts:

On Rye toast: tuna, fennel, garlic, mayo, olives, salt, pepper, and lemon juice, all mixed. Cover with a nice Cheddar cheese. Throw it in the broiler until cheese is melty. Serve on a paper plate.

Ugh, It Is Hot
It is easily 85 degrees inside my house, and I'm hungry. I have no idea what to do about dinner.
Last summer, in this circumstance, we ate out every meal. We can't do that this summer. I don't want to, but we need to come up with some good non-cook dinners until we get the second window air conditioner installed.
But tonight, it may be takeout.

Seafood Green Curry with Fresh Peas

CJ isn't around tonight, so dinner for myself. I had a can of real Thai green curry in "the pantry," so I went for it.
Damn, it was spicy. Like, really spicy. I had never had the green curry before, and actually thought I had red curry in "the pantry." I had planned on using one can of lite coconut milk, but it was so spicy I had to throw another can it to cut the spice, and I like spicy food.
I started with spring onions from the farmer's market and some garlic, sauteed. I added the curry and the coconut milk and brought it to a simmer. Once simmering, I added the mushrooms, (frozen) shrimp, and (frozen) squid. One or two minutes later, I added the bay scallops and peas from the farmer's market.
Totally tasty, but it was hot. Hot. Hot.

Fiddlehead Ferns
Mmmmm, fiddlehead ferns. We had never had them before, but they were tasty. The carton they came in said they were wild, I really hope they were. I sauteed them with butter, garlic, salt and pepper. They taste like asparagus. They taste like greens. They taste like spring.Our ferns were paired with baked sweet potato fries and bison tenderloin, but, in my mind, the ferns took center stage.

First CSA Box-Rhubarb
We received our first CSA box from Double Rabbit Farm. The farm has had a tough spring and our first quarter share was a bit small, mostly greens. But there was enough rhubarb for this:

Summer Lovin'
I picked up some spring onions and radishes from a stall at the Farmer's Market last weekend. I love fresh food. I love this time of year.
CJ cooked up some hamburgers with locally raised beef and I made a sweet salad with corn, radishes and spring onions. Fresh and delicious, it was outstanding.
