Lamb Shanks with Lemony White Beans
CJ really liked this dish, I liked it a lot too. The recipe came from Cooking Light, which I have newly subscribed to. The lamb was very tender and the bean mixture was tangy and tasty. Unfortunately it takes 3 hours to make, mostly inactive time, but not a weeknight meal.

OK that looks awesome. I have one question...do you find it hard to cook for just you and CJ? Whenever I make something similar to this dish, I end up with more leftovers than we can eat before they go bad. What do you do with your leftovers?

uhh, that was tomorrow's post. We currently have so many leftovers in the fridge we can't put anything else in. We have chili, a rice curry, the peanut stew, and some other bits of stuff. We bring it to lunch, but mostly, it goes bad.

I love lamb shanks! And to think they used to be a cheap cut of meat. So sad when they try to charge 9.99/lb for a meat that's mostly bone.
